Raspberry Lemonade Quaran-tini Recipe

My version of the Raspberry Lemonade Quaran-tini is an adaptation of a drink that appeared in my Facebook feed one day. The original recipe, pictured here, looked delicious!

Have you heard the saying, “necessity is the mother of all invention?” My local grocery store, didn’t have the exact ingredients needed for this recipe in stock. Pandemic protocols were asking people to shop locally and reduce unnecessary travel. Out of necessity, I used some resourceful thinking, purchased items that were available, and Erin’s Quaran-tini was born.

I first made the adapted version, and trial tested it on myself. The drink had me reminiscing, dreaming of the sun, sand and rum of the islands. A few years ago I enjoyed a trip to Jamaica. During the trip we toured the Appleton Estate. Their Coconut Rum is so delicious, and unfortunately (as far as I am aware) cannot be purchased here.

I enjoyed the refreshing drink so much I decided to add it to the menu for the socially distanced Easter dinner that I hosted. The drink was a hit with my Dad, who was my only guest! I have shared the recipe a few times since then. Now that we are into camping season, I have received pictures of people enjoying the refreshing, and fun quaran-tini around their campfires!

The adaptation included cutting the sweetness of the juice with some club soda. I have used several brands and flavors and the drink always turns out great. Be resourceful, use what you have in the house, and let me know how it turns out for you!

Erin’s Quaran-tini: Ingredient List and Directions

Erin’s Quaran-tini

Ingredient List

  • Co-op Lemonade (2L plastic jug)
  • Co-op Gold Frozen Raspberries
  • Fresh Lime Wedge

Directions:

Into a glass put 5-6 frozen raspberries, and 1 oz. of Coconut Rum. Add approximately 1/2 c. of lemonade (I usually just use a splash of lemonade, fill the glass with club soda of your choice. Garnish with a lime wedge. I squeeze the lime wedge and throw it into the drink. Voila!
